Bambang, Chef & Owner of Chiba Steak said that He wants to introduce Western food based on the experience he was studying and experience while working. He once worked in a kitchen that had European, American, and Australian food menus. It made him want to use the classic method cooking.
There are no ingredients which ready to eat, all by the process based on what he learned.
They create their basic sauce such as Mushroom sauce, Pepper sauce, Bordelaise sauce, Barbeque sauce, and Cafe de Paris sauce, which were processed in a classic way.
For example, the basic sauce starts from beef stock to Demi Glace which takes 8-12 hours.
Coffee and Dine is a great concept. He said that coffee, especially black coffee, is very good when paired with a big meal.
