
SMKN 4 Surakarta has long been recognized as one of the leading vocational schools, particularly in the Culinary Arts program. They recently received valuable support through a CSR initiative from various industries dedicated to advancing vocational education. This assistance provided comprehensive upgrades to the restaurant training facilities, including restaurant furniture, barista equipment, pastry kitchen tools, and hot kitchen installations. State-of-the-art appliances such as countertop ovens, mixing equipment, and additional kitchen stations have been integrated, enhancing the school’s laboratory practice capabilities. The new theater-style demo cooking area further elevates the learning environment for students.
We met Erfin Dwi Priana a Culinary & Cooking Teacher of SMKN 4 Surakarta. She told us that The kitchen laboratory at SMKN 4 Surakarta showcases the collaboration between the school and Nayati, a renowned producer of commercial kitchen equipment. Additionally, the partnership with Restomart has brought tailored project solutions, ensuring the laboratory meets professional standards for education and industry relevance.
The teaching approach in the restaurant program is designed to be dynamic and immersive. Through a block system, a class of 36 students is divided into three groups, each spending a week managing different aspects of restaurant operations. Twelve students are tasked with handling customer service and restaurant operations, another group of 12 works in the pastry kitchen focusing on bakery and pastry production, while the remaining 12 manage the hot kitchen, preparing a variety of Oriental, Indonesian, and Continental dishes. Additionally, students actively participate in real-life catering projects, managing orders ranging from 30 to 120 mini-packs, and gaining hands-on experience in food preparation and service.
The school’s facilities are equipped with Nayati’s high-quality kitchen products. Starting with the initial purchase of a dancing workbench, the collection has expanded to include ovens and dough mixers. The durability of Nayati products has proven to be an asset for the school, ensuring longevity and reliability. On occasions where technical issues arise, such as a malfunction with the oven, the Restomart team has been prompt and efficient in addressing and resolving them. This high level of service ensures smooth operations and effective learning experiences for the students.
