Maishin by Okayo Osho brings the Izakaya Restaurant concept. A place to go to hang out and have good food and beverages. They provide private dining rooms that can fit up to 16 people with a total capacity that serves 100 people.
Chef Mandif Waroka, as the Chef Patron, is accustomed to preparing porridge for his kitchen team after work hours to unwind. The porridge he makes has become a favorite and inspired the creation of a Japanese restaurant with porridge as one of its signature dishes.
Then we met Emily Wijaya, co-owner of Maishin who confirmed that their Restaurant concept came up by meeting with Chef Mandif Waroka that have passionate about Japanese Cuisine. As Chef Mandif Waroka’s experience in Japanese Cuisine, so they decided to found “Maishin Izakaya”.
In the development phase, Chef Mandif tells us what the beginning step is. The thing first is about developing the taste, taste which is developed by recipe.
Then he was concerned about speed, efficiency, and productivity. Then we meet Chef Hary, the Head Chef of Maishin. We talked about The Menu and All dishes concept. All the dishes there are Japanese premium oriented.
They have signature Moriawase Sashimi, and premium Signature Sushi, and their best menu is bone marrow porridge. At Maishin the local resource is dominating for menu development. Especially local seafood, as an example for the sashimi menu they more often use local seafood sources. So they have 70% and 30% composition between local and imported sources.
Chef Mandif said that 3 things to consider in how important success is a restaurant with kitchen equipment. The first is the heat tool’s accuracy, so the kitchen equipment performance was very helpful for their kitchen operation.
